Two Posts in One Day?

I know...a miracle practically.  But, since it is Monday, and since I blew the posting off last week, I could do that to you again.  lol

So, without further ado...

Monday was a holiday hee hee...so I didn't make dinner, Phil did.  This week, I will give you a sneak tho.  Chili Relleno casserole is in the oven as I type.  Is smells sooooo good!

Tuesday we had orchiette with broccoli and sausage.  The kids always love this when I make it, and it is super quick an super easy.

 Wednesday we had chicken cacciatore

Thursday was a Waldorf salad with grilled chicken.

Friday, beef enchiladas.  Let me tell you something about enchiladas.  It takes way too many pans to make, so I tried to cheat and not fry my tortillas before wrapping my enchiladas.  You know what happened?  The tortillas practically disintegrated.  They were tasty, but they wouldn't really stand up.  sigh

Do you know why I didn't fry my tortillas?  Because my stove top is too small for 3 full sized frying pans.  But guess what?  We are beginning the process of remodeling my kitchen.  Woo Hoo!!!!  And I am getting a fabulous new range, 36 inches with 6 burners!  I am so excited.  So, tell me....are you interested in hearing about my kitchen remodel?  Would you rather me just stick to scrapping? Do you like the menus?  What to do, what to do?

Well, how about a recipe for while we ponder these and life's other great questions....

Orchiette with Broccoli and Sausage 

1 lb Italian Sausage
1 lb Broccoli florettes
1 lb Orchiette or Pasta Shape of your choice
1/2 cup White Wine or Chicken Stock
pinch Crushed Red Pepper
Parmesan Cheese for garnish

In large saute pan over medium heat, brown the sausage. Remove sausage from pan and deglaze with white wine (or stock) and add broccoli and red pepper. Cover, reducing temperature to low and simmer until broccoli is tender (about 4 minutes) Add cooked sausage and cover to heat through. Serve over pasta, topping with shredded Parmesan cheese.

Snow?

Well, it looks like it is going to be terribly cold this weekend here in Northern California.  The snow level may drop as low as 500 feet and there is even talk of flurries at sea level (ok, only 10%, but it is a chance.)  There will be no accumulation as the ground is too warm, but the hills behind my house may get a dusting, and if it does, I promised the children a hike!  It is a pretty steep one, 800 feet in 1 mile...but if there is snow????

If there is no snow, I plan on holing up in my scrap room and playing all day.  Before I start more though, how about if I share a few I have already completed.  Both of these are super simple, really not my style, but they are done, and they can't all be masterpieces.  lol

Ainsley was not happy with me taking her photo.  The handwriting here is crooked...I hate my handwriting.  I think I will have to erase it and start over, but the overall design doesn't thrill me.

And It's Back.....

The cold (I know some of you won't think it is cold, but cold is relative, highs will be upper 40s), the rain,  looks like we are in for a fabulous weekend.  The Boy Scout snow camping trip was cancelled due to inclement weather, so my boys will be home this weekend.  No one wants to be stranded.  So, that means I should have lots of time to play if I can convince the family to help with the chores.

Speaking of playing, I have a few more projects to share today.

Mackenzie is growing so fast.  Hard to believe that this is her second year en pointe at the ballet.  She is getting so much stronger.  She really enjoys her class and has made a few good friends.  Lots of lovely Prima Marketing yumminess.  Last year's Analee line and a few doilies.  Can't bear to break into this years new Prima yet.  hee hee

And here is a little bit older photo of Mackenzie.  This time of her at the San Diego Zoo.  We were on one of the trails and she sat on the rock and began meditating.  Such a goof.  But the landscaping was so beautiful and so peaceful.  That zoo is amazing!  If you ever get a chance to go you definitely should.  I am not usually a huge fan of zoos, but this one I just love.  Lots of Crate Paper Restoration and a bit of Prima.

A Bit of Spring

Hi Everyone.

A few weeks ago, Punxsutawney Phil popped out of his hole and declared that spring was on its way.  Well, not here.   Last week, it was cold, and rainy, and completely icky outside.  I decided to brighten my day by creating a bit of sunshine for my home.


I found these little birdhouses in the wood section of my local Michaels store.  With just a few scraps of beautiful papers (including some gorgeous Prima), bits of ribbon and lace, and of course a few Prima flowers, and  bling, I was able to create a fun little home decor project to brighten up my home.

I started by using some mist on the base of the houses. Then cut the papers to size.

These little houses really brighten my day when I walk by them.  The first house, Ainsley is trying to steal for her room.  The Pebbles house is heading to Memories Live On, and the third house, well, I think that one I am keeping for myself.  hee hee

Finally....

I know I promised to be back today, and here I am.  It was a crazy busy day here....but instead of complaining about it...let's just get to the good stuff.

Brighton and Ainsley had a swim meet this weekend which was tons of fun, especially on Saturday when the temps were in the upper 40s and it poured rain.  Well, since it wasn't exactly good viewing weather, I stayed home and managed to get quite a few chores done.  Sunday was beautiful.  So I went to the meet and actually watched my children swim.  So fun!  Chatted a bit with some friends, watched Brighton and Ainsley both get a few new A times, and had a lovely day.

Thanks goodness for the long weekend though.  Monday, with Phil being off work, allowed me some much needed creative time.  I have a post tomorrow over at Your Memories Here using some of the gorgeous trims, glimmer mists, flowers and bling.  So be sure and be back then.  I also have these two layouts over at Ideas for Scrapbookers.  This week's designer showcase is ribbons.  I have been crazy for pleated ribbons lately, so I decided to make these.

This is Ainsley, posing with her new Christmas ornament, before we put it on the tree.  See that big, red rose?  It was made with some Maya Road pleated ribbon.  So quick and easy to make, and the texture is fabulous.

And here is another layout of Ainsley.  These photos are from a few years back.  I was doing something in the office, and she came in a mess.  So, I told her to go into the bathroom and get cleaned up.  Well, she did.  She filled the pedestal sink with water and bubbles, and climbed right in.  What a goof!  lol  She thought she was so clever sitting in her 3 inches of water.

Hooray for Friday!!!

Yep, it is Friday and I should have some time to play this weekend...and I should be getting a box of yummy Prima goodies today!  So, who cares that it is cold (mid 50s) and raining.  I will lose myself in the beauty of my new goodies!  lol

Speaking of new goodies...Did you see this over at Catch the Moments Kits?  Love!  Can't wait to get my hands on it.

And I guess some other people are with me because Devon said she has already sold quite a few.  If you love this as much as I do, you may want to hop right over and take a peek.  Filled with yummy Stella and Rose papers and goodies from American Crafts.  There are even Prima flowers in the add ons (which you know I had to have).

Only a few more days....

Until President's Day!  Do you know what that means?  No work for DH, no school for the children, no activities for the children....HEAVEN!

But until then, it is the same o', same o'.  This weekend will be really busy as Ainsley and Brighton both have a swim meet and Mackenzie has a call at the ballet.  They are beginning rehearsal for the spring production of Silly Simon.  It is a children's ballet choreographed by our ballet mistress Lise LaCour.  Mackenzie will be a scribe.  We don't know yet what that involves but we know she is in 2 of the 5 scenes.  Well, that is the word right now anyway.  lol  So, cross your fingers that all goes well this weekend for both the swimmers and my dancer.

I have another color challenge layout to share with you today.  This one from The Color Room.  Another gorgeous palette and even came with a sketch!  Gotta love that!

Fun Photo Frame

So, remember how I told you my sister was coming over for a visit this last weekend?  And I was going to get to babysit Lili?  Well, she has been terribly busy I thought it would be nice to make her a little something.  She isn't much of a photographer or crafter, and I have taken so many photos of her darling daughter, I thought it would be fun to make her a photo frame she could put a photo in.


Having picked up a package of three simple white frames at Target in the Dollar Spot a while ago, I simply added a few Prima Sprites (which happen to be on sale right now) and a bit of bling from the Your Memories Here store, and had a much more personalized frame to gift.  

She hasn't selected the photo yet, so this is still the stock photo that came in the frame.  LOL I can't imagine why she hasn't chosen.  It isn't like I have a thousand photos of Lili to choose from.  hee hee

This was a super simple project to create and I am very happy with how it turned out.  Now if I can only get her to choose a photo.

Happy Day After...

Valentine's Day.

Well, things here got a little shakey yesterday.  Thank goodness that Valentine's Day isn't a big deal around here cause it would have been a huge flop.  So, instead of boring you with all the horrid details of my disastrous holiday, how about I share something that did go well.


A page I did of my wonderful husband.  It isn't too often that I do layouts featuring the man of my dreams since I am usually so focused on the children. lol  This weeks challenge at Color Combos Galore was the colors red, black, grey and white with the twist being photos of someone you love.  Well, who do I love more than my dh?    I had so much fun with this one, lots of all the things I love on a layout; flowers, bling, patterned papers, lace, and with the photos of Phil!  eeeek!

Happy Valentine's Day

I hope you are having a great day...it is a bit cold and rainy here, but other than that....

Last week wasn't terribly exciting as far as meals went, but, just in case you are looking for ideas...

Monday we had baked manicotti with salad and garlic bread.  I tried a new sauce recipe and Mackenzie was much happier with this version.  Seems she doesn't like the simple marinara sauce I often serve because it is too tomatoey!  uggggh.  Wish she had told me that a while ago.  Of course, the other two like the more tomato flavor.  oh well.


Tuesday we had an oven roasted chicken (beer butt) with mashed potatoes, broccoli and tomato.  Yummo.  I roasted the chicken upright over a can after injecting it with a mixture of beer and spices.  mmmm, so tasty.    I think I may want to invest in one of these for the grill this summer.  Since we don't usually drink out of cans it would be so much more convenient.

Wednesday I made beef stew.  I really need to start eating more beef as the freezer is still quite full and it won't be long till we need to place our order for this years steer.

Thursday I cooked a London broil in the crock pot with some fries and peas.  I hadn't planned on serving it with peas, but forgot to add them to the stew the night before.  lol  It came out really tasty and I had plenty of leftovers for sandwiches over the weekend.

Friday was sausage and peppers over some penne pasta.  Quick and easy and in the oven, leaving me plenty of time to drive in circles.  hee hee

Well, now that I am back to thinking of the vertical grill thing with the cup to hold all the liquid for the chicken...how about if I share the recipe for the liquid?

Beer Butt Chicken (yep, makes the children crack up when I call it that)


12 oz of beer
1/4 cup cider vinegar
1 Tbsp paprika
1 tsp ground black pepper
1 tsp salt
1 tsp sugar
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
pinch of cayenne
1 3 1/2 lb. whole chicken

Preheat oven to 350

Mix the spices into the beer and pour back into can.  Place the chicken over the top of the can (shove the can up the chickens butt. roflmao) and place in a roasting pan with the can upright.  Roast for approximately 1 hr or until chicken is cooked through.  Carefully remove chicken from its throne and enjoy.

Lots of....

Woo hoo!!!  It is Friday and you know what that means?  It is almost the weekend.  And I am just thrilled because this weekend I am going to baby sit my niece while my sister heads to the spa.  Yep, you heard me...I picked baby sitting over a massage.  Maybe not the best choice I have made, but I am looking forward to it none the less.

And lucky for me I will have lots of help with the baby sitting.  Last time Lili came over, Ainsley was a great helper.  Lili decided she really enjoyed chocolate kisses.  Ainsley decided to be the one to help her clean up.


I used a Pencil Lines sketch for this and my last few bits of Sassafrass Mix and Mend.  I added in a few different flowers and lace and called it done.  hee hee

Well, I hope to not only find the time to babysit this weekend, but hopefully a bit of time to do some scrapping as well.

Mackenzie....

Just a quick post to to share a couple of layouts with you featuring Mackenzie.  She is growing way too fast.  Hard to believe she will be a teenager soon.  eeeek!  

Here she is on the day we went snowboarding in Winter Park...well, she went snowboarding.  I skied for a bit then went to get warm and sit in the lodge.  lol  I used a Pencil Lines sketch and some older Fancy Pants papers.  And of course, more of my stickled Cricut snowflakes.  I am so over doing winter pages.  lol


And here she is...just smiling for the camera.  Lots of Cosmo Cricket papers here with bits of flowers and bling.  She really is growing way too fast.

Well, gotta run!  Thursdays have become insane around here with Brighton attending one of the local Junior Colleges.  I so can't wait for him to be able to drive.

Valentine's Day

Morning everyone.  I can't believe how quickly Valentine's Day is upon us.  I am still no where near ready. What does one get for a 15 year old boy anyway?

With the help of a few tools and supplies from the Your Memories Here store and a Sassy Lil' Card Sketch, I was quickly able to put this card together.  Unfortunately, I think it is too girlie for that 15 year old boy.  Lucky for me I have a few daughters.  lol
Bazzil cardstock, Prima flowers, lace and patterned paper, Tattered Angels Glimmer Mist, Pink Paislee Chipboard, Creative Imaginations rub on, Martha Stewart punch, Cuttlebug embossing folder

I used a bit of Tattered Angels glimmer mist on the mini roses and lace to color them to my monochromatic theme and quickly embossed my card stock with a Cuttlebug embossing folder.  The card came together in a short period of time and I am sure one of my girls will love it.

Speaking of daughters, there are bunches of layouts at Ideas for Scrapbookers today in a showcase of Valentine's themed layouts.  This layout is of the two girls at a Valentine's Day party a few years back.  
Bazzil cardstock, Cosmo Cricket patterned papers, Webster's Pages lace, 3tailscraft chipboard, AC Thickers, Misc buttons and ribbon.

This layout is for a few challenges over at Scrapbook.com and I swear it is straight in real life.  It features a fun owl from 3tailscraft.  The weight of the chipboard was great and took ink, mist, and paint very nicely.  I hope to get my hands on more of it soon.

This Weekend was.....

Scraptastic!!!!

I was so lucky to have Jessica invite me to GDT for her fun club Scraptastic.  And I was thrilled to receive the Echo Park Little Boy line to play with.  While my boy is no longer little, I just love the playful patterns and bright primary colors.  The kit came with everything you could want...cardstock, patterned papers and fun embellishments.

The kit came super fast, just in time for me to throw it in my bag and head to a crop over at Our Paper Place!  I got to spend my night chatting with both old and new friends while playing with paper.  What could possibly be better than that?

This first project features photos from a few years ago when we went to Fort Collins for vacation to see Phil's family.  We took the children to a local farm where they were able to play on the farm equipment and pet animals.  They have grown up so much since then.  sigh  Now I can't get them to go to the farm.  Really it is all I can do some days to get them out from their video games.  lol


Did I mention, that we got to Colorado by train?  For some reason, we got it into our heads that travelling by train would be quite an adventure...and it was.  Who knew that train travel was so much fun, so relaxing....as long as you didn't need to get anywhere quick.  hee hee...Really tho...it was very nice.  They had a fabulous restaurant with great food and service, beautiful scenery, movies at night...what more could you ask for?  Well, trains that ran on time would be nice.  lol  We plan to do another train trip some day.  It really was that much fun.  Think next time it will be the Pacific Coast Starlight.


And finally, here is Brighton just a few months ago.  Can you tell how much he enjoys my taking his photo?

Monday Monday

Why does Monday always have to come after a relaxing Sunday?  Yesterday was so nice, eating lots of snack food and watching some commercials.  sigh

Well, here it is so I guess this is my day to share some menus and a recipe!  woo hoo!!!!

Monday we had Tomato Soup with Grilled Cheese...yummo!!!

Tuesday was Jambalaya in the crock pot...couldn't find my regular recipe so had to wing it...rice came out a little gummy, sigh.

Wednesday was chili, which is a family favorite and an easy dinner to make since it is just a big dump.

Thursday we had the scouts over for PLC so Phil picked up pizza.  Teenage boys and pizza just seem to go hand in hand.

 Friday night we had Pioneer Woman's Cowboy Calzones.


Well, the pasta is on the stove for tonight.  Baked Manicotti. I wonder if I could get away with adding spinach to the filling?  hmmmmm, It would be so good, but I am afraid the children would protest.  Well, time will tell.

Until then, enjoy my favorite recipe for chili.  As a Texan, I know that this recipe has gone off and been ruined with the addition of beans.  But, the children like it that way, and since they are Californians.....

Beef and Bean Chili

2 pounds ground beef
1 lg yellow onion, chopped
2 cloves garlic, minced
15 oz can pinto beans, rinsed and drained.
2 14.5 oz cans diced tomatoes with green chilies
6 oz can tomato paste
2 3.5 oz cans diced, roasted green chilies
3/4 cup beer
2 tsp. chili powder
1 1/2 tsp ancho chili powder
1 tsp ground cumin
1 tsp dried oregano
salt to taste

In a large soup pot over medium high heat brown the onions and garlic.  Add in the ground beef and cook till meat is no longer pink breaking up any clumps.  Drain off the fat.  Add in remaining ingredients and cook for 1-2 hours on low.

Told ya....it is just a big dump.  hee hee

Thursday means....

Well, that besides my life being crazy, it is my day to post over at Catch the Moments Kits.

I have two layouts today made with the fabulous grab bags that Devon has available at the Catch the Moments.  These grab bags are such a great deal.  Less than 50 cents per sheet and such a gorgeous selection of American Crafts paper.  You can even request certain lines.  These are from the Dear Lizzy Enchanted.

First up, Mackenzie.  I used lots of flowers and pearls to highlight my photo.  This is her waiting to see Woody at the California Adventure Park just a few months ago.  Why is it that waiting doesn't seem to be so bad when you are at Disney?

 

For this layout, I decided to really let the photos and the papers shine!  My adorable niece.  Ainsley gave Lili and older baby doll and carrier.  Lili just adores it!  She has such a good time carrying the baby around and will even share the occasional bottle.  hee hee

Happy Groundhog Day

I hope today the groundhog told you what you wanted to hear.  I know that we in Northern California are already seeing spring with temperatures nearing 70.

I have a post up over at the Your Memories Here blog today and I wanted to share here as well.  If you aren't familiar with the store, you definitely want to check it out!


I have had this little box sitting on my desk for ages, and with Valentine's Day coming I thought it would be perfect to fill with little chocolates for my loves.  (aka children).  And maybe later with some of the new gorgeous Prima trinkets that I have pre-ordered from the store.


I used some beautiful  Prima paper and lots of blooms and pearls to embellish the box.  I was really surprised at how quickly it all came together.  Of course, it is hard to go wrong with flowers and pearls.
To help the white flowers blend a little better with the papers, I used a quick spray of Tattered Angels Glimmer Mist; just enough to "age" them a bit.

Now all I have to do is make some chocolates to put inside.  hee hee  Or maybe I should just hold on to the box myself.  hmmmmm

Valentine's Day, Already?

It is hard to believe that 2011 ins't just upon us, but it is already February!  Tomorrow is Groundhog's Day and I know that many of you are desperately hoping the little guy predicts spring!  I can't imagine how many of you deal with those icy temperatures.  I know I am cold when it dips down into the 50s.  hee hee

Oh yeah...Valentine's Day.  I have been working on a few cards and other goodies for my little darlings and thought that I would share.  Please forgive me....I am not a card maker.  Any helpful hints on taking photos of these in the future would be greatly appreciated.

I made the card and the little tin for Ainsley using some papers from the Catch the Moments Grab bag.  The tin is holding some small treasures she received for Christmas.
